The "Watermelon Gastronomy" seminar, which took place on Wednesday July 6, from 10:30 in the morning until 14:00 p.m., at Hatziiorgis Mills, in Frenaros, has been completed.
More than 20 participants, professional cooks attended the seminar and left with the best impressions.
In his statements to FamagustaNews, Kostas Michael, Head of the Organizing Committee for the 13th Watermelon Festival, said that the objective of the seminar was for the recipes that were presented to be included in restaurants and hotels.
At the Seminar, the participants from all the provinces had the opportunity to learn the recipes of the Chef, Panagiotis Charalambous, to ask questions but also to "steal" ideas either for other recipes with watermelon or in general.
According to the Chef instructor, Panagiotis Charalambous, recipes were created based on watermelon, "we also combined them with fish, prepared watermelon ice cream, Watermelon jam and also married feta, mint and watermelon."
More specifically, the dishes presented at the seminar were the following:
- Allumi in batter with watermelon marmalade
- Burrata Mozzarella with basil pesto and watermelon fluid gel
- Coconut tapioca, compressed watermelon, watermelon sorbet
- Feta, Mint and Watermelon
- Tuna Tataki with five spices, compressed watermelon and unagi sauce
- Seabass ceviche with watermelon on textures
- Watermelon soup and halloumi cheese
Sakis Siakopoulos, a chef at a restaurant in Nicosia, who participated in the seminar told FamagustaNews about the seminar that it was "very nice, very informative, interesting both in flavors and in photography, in the sense of the eye, because this is very basic for me. They say that if it doesn't fill the eye, it doesn't fill the stomach. Today we filled our eyes and stomach.
The partners and organizers did very well to organize this seminar because we have to highlight the tradition, very basic for our products. We strengthen those of our house."
Nikos Zacharias, a cook in Protaras, was also satisfied with the seminar, who, as he stated, learned many things, "which will help us highlight the products of our country and help the producers to continue producing."
At the end of the seminar, all participants received a certificate of participation signed by the chef instructor.
Note that the seminar was held by the Frenaros Community Council and the Cyprus Chefs Association, in the context of the 13th Watermelon Festival which will take place on Friday July 8, 2022, in Frenaros.
