Recipe for octopus stew

Ingredients:
700g small octopus whole Kallimanis
500g dried onions cut quince
300g leek in half slices
12 whole onions (the white part only)
100g olive oil
140g tomato puree
200g eggplant into cubes in water to clear
1 chopped tomato crushed with onion
1 cinnamon stick
1 concentrated vegetable broth
2 teaspoons sweet salt
½ κουτ. sweet pepper
4 laurel leaves
2 teaspoons mustard soup
700gr water

Instructions:
Take the octopus out of the package and put it in a perforated dish, over a deep bowl, which will collect the liquids. Cover the pan with a damp towel or cling film and place it in the refrigerator compartment. The octopus has been thawed as soon as its flesh has acquired elasticity.

We clean the octopus and after we wash it well, we cut its tentacles and the hood into pieces. In a bowl of water, peel the eggplant for a while and then drain it well.

In a deep saucepan, sauté the leeks until they are shiny and add the eggplant, the chives and the onion and continue the sautéing for about 2 '. First add the hood (because it is harder) and after about 2 'the rest of the octopus, the tomato and the water.

Finally add the pulp, bay leaves, broth, salt and pepper and lower the heat. Simmer for about 20 minutes and then add the cinnamon. Continue cooking and after 10 'add the mustard, stirring well to go everywhere. Let it boil for another 8 minutes. Remove from the heat and serve immediately.
