Sunday recipe: Egrets with eggs

Make one of the traditional dishes of Cyprus with wild asparagus (agrelia) for the lucky ones who manage to find them!

Ingredients:
wild asparagus (asparagus)
4 eggs
pepper
salt
olive oil for frying

Instructions:
We start by washing the hares very well.
Then cut them by hand into small pieces.
Pour a little olive oil in a large non-stick pan.
Add the agrelia and let them fry.
Then we collect the eggs which we will then add to our hay.
We do not want the agrelia to be fried very simply to soften.
Add freshly ground sea salt and pepper.
Then add the eggs and let them cook for a while.
Then turn them to cook on the other side.
Ready!
Serve immediately, squeezing a little lemon for more flavor.
