Ingredients:
1 kg whole small potatoes with their skins
1 cup tea olive oil
1/2 tbsp. fresh chopped rosemary
1/2 tbsp. fresh chopped oregano
6 chopped green onions
2 tbsp. Dijon mustard
1/4 cup balsamic tea or plain wine vinegar
Salt
Freshly ground pepper
Metal or wooden skewers
Instructions:
Wash the potatoes very well with their skin. Put them in a saucepan in boiling water. From the time they boil, boil for 5΄-7΄, depending on their size. We do not want them to overcook, just soften a little.
We light the fire. Cut the potatoes into 3-4 slices, depending on their size.
Put 1/2 cup in a bowl. teaspoon olive oil, herbs, half of chives. Add the potatoes, and mix well. Pass the potatoes on skewers, with the cut side down. Season with salt and pepper and bake the skewers on the grill for about 15κτικά, turning them regularly, until well browned. Put them on a plate.
Put the rest of the olive oil (1/2 cup), the mustard, the vinegar, the remaining onions and the salt and pepper in a bowl. Mix them very well, and pour over the hot potato skewers. Serve hot.
