Portion 6 – 8

Components
• 8 eggs
• 4 medium potatoes peeled
• 2 cloves garlic, chopped
• 115 gr. yoghurt
• 2 tbsp. olive oil
• 1 tbsp. baking powder
• 2 chopped red peppers
• 1 medium onion, finely chopped
• 4 Cypriot sausages cut into thin slices
• 100 gr. crushed feta
• 100 gr. various grated cheeses
• Or a bunch of chopped parsley
• 2 tbsp. breadcrumbs
• Salt
• Pepper

Execution method
Preheat the oven to 160 ° C in air.
• Grease the bottom of a pan well with a brush and add enough toast to go everywhere, even to the sides.
• Put the potatoes in a saucepan with water and salt and cook for 10 to 12 minutes until soft and find no resistance when pierced with a fork. They should not be cooked completely.
• Drain them and when they cool they cut them into small pieces.
• In a non-stick pan, pour 1 tablespoon of olive oil and sauté the sausages until lightly browned. Then, we take them out on absorbent paper to drain.
• In the same pan and without cleaning it, add 1 tablespoon of olive oil and sauté the onion until soft.
• Then add the garlic and continue sautéing for 1 minute.
• Remove the pan from the heat, stir in the peppers and allow the mixture to cool.
• In a bowl, beat the eggs well with the whisk and season with salt and pepper. Then, add the yogurt and mix well until the mixture is homogeneous.
• Add the cheeses, feta cheese, baking powder, parsley, potatoes and sauteed ingredients and mix them in the egg mixture.
• Pour the mixture into the pan, taking care not to damage the crust of the toast. Bake the omelette for 1 hour, until golden brown and thickened.
• Leave it to cool for 5 minutes and serve it with salad.
