Components
For the marinade
- 2 kg pork leg, cut into small pieces
- 600 + 400 ml red dry wine
- 2 tbsp. coarsely ground (slightly beaten) coriander seeds
- 4 and others olive oil
- Salt
- Pepper
For oatmeal
- 300 gr. oatmeal for pilaf
- 500 ml of water
- 1 large onion, finely chopped
- 2 cloves chopped garlic
- 2 and others olive oil
- 2 tbsp. fine snakes
- 2 tbsp. tomato paste
- 1 ripe grated tomato
- Salt
Execution method
- Put the meat in a non-metallic bowl and add the wine (600 ml) and 1 tablespoon of coriander.
- Stir and keep covered in the refrigerator for 4 hours or better for one night.
- Half an hour before cooking, take it out of the fridge to get room temperature.
- Then drain the meat from its marinade and set it aside (keep the marinade in a bowl).
- Put a pot on high heat to burn and add 4 tbsp. olive oil.
- Pour in the meat and let it brown on all sides for about 5 minutes.
- Once browned, add the wine we kept from the marinade (600 ml), the rest of the wine (400 ml) and 1 tbsp. coriander and season with salt and pepper.
- Lower the heat, cover the pot and simmer the meat for about 30 minutes until soft.
- After 30 minutes, take with a ladle 1 glass of the meat broth for the oatmeal and continue cooking for another 15 minutes, until the meat is well softened.
For oatmeal
- Put a saucepan over medium heat and add 2 tbsp. olive oil.
- Add the chopped onion and mix with a wooden spoon. until the onion is soft and golden.
- Once browned, add the garlic and the vermicelli and mix.
- Then add the pulp and the grated tomato.
- Stir in the oatmeal, add salt, the broth we kept and the water.
- Cover the pot and simmer for 20 minutes until it absorbs all its liquids and is cooked.
- Remove the oatmeal from the heat and keep it covered for 10 minutes.
- Stir with a fork to make it grainy.
- Serve the naiveties with oatmeal, yogurt and salad.
