Roasted peas with potatoes

Ingredients for 4 people

  • Or a kilo of peas
  • ½ φλιτζ. olive oil
  • 1 small onion, finely chopped
  • 2 chopped spring onions
  • 2-3 medium potatoes
  • 2 carrots
  • 3/4 fl. tomato juice
  • enough dill
  • salt
  • pepper
  • some sugar
  1. Peel a squash, grate it and chop it finely.
  2. Peel the carrots and cut them into slices.
  3. In a saucepan, pour the olive oil. Once warm, add the onions and sauté.
  4. Add the carrots and chopped potatoes. Stir and let them sauté.
  5. Then add the peas, sauté for a while and pour over the tomato juice, dill and salt and pepper.
  6. Add a little sugar and hot water, just enough to cover the peas.
  7. Let it simmer until the vegetables are soft and the food is left with its oil.
