For the brownies
225 gr. unsalted butter
4 eggs
200 gr. granulated sugar
100 gr. soft brown sugar
1 tbsp. corn flour
150 gr. flour for all uses, sifted
100 gr. cocoa, sifted
1 tbsp. espresso coffee
1 vanilla extract
1 pinch salt
250 gr. chocolate couverture, finely chopped
For the cheese filling
200 gr. cream cheese at room temperature
1 egg
4 tbsp. granulated sugar
1 sachet of vanilla or 1 tbsp. vanilla extract
Execution method
For the cheese filling
In a bowl, mix the sugar with the cream cheese until smooth.
Then add the egg and vanilla and mix well.
Set aside
For the brownies
Preheat the oven to 180ο C in the air.
In an aluminum pan, put oil paste covering the bottom and sides, butter it and sprinkle with cocoa.
Melt the chocolate with the butter in a baking pan (a bowl which is on top of a saucepan with boiling water, without the bottom touching the water), stirring until it becomes a smooth mixture.
Remove the bowl from the pan and leave the mixture to cool.
Then, put the sugars in the bowl of the mixer. eggs, espresso, vanilla and salt and beat for 4-5 minutes with a whisk until fluffy and smooth.
In a bowl add the flour, cornflour and cocoa (sifted).
After the ingredients are fluffy in the bucket of the mixer, add the melted chocolate to the mixture and mix with a spatula until all the ingredients are homogenous.
Finally, add the flour with the cocoa and the cornflour and mix.
Pour large spoons of our mixture into the pan without spreading it.
Next, pour spoonfuls of the cheese mixture all over the pan over the brownie mixture.
With a knife we form white lines.
Bake for about 30 minutes (Do not overcook because it will dry out a lot).
Allow to cool completely and cut into square pieces.
