Cannoli with lemon

Ingredients for 4 people

  • 300 gr. flour
  • 50 g sugar
  • 1 cinnamon sticks
  • ¼ κ.γ. soda
  • 4 tbsp. butter
  • 4 tbsp. mavrodafni
  • 1 egg yolk
  • zest of 1 lemon
  • 3-4 tbsp. water
  • seed oil
  • couverture in drops
  • 300 gr. ricotta
  • 100 gr. yoghurt
  • 150 gr. mascarpone
  • 150 gr. powder
  • zest of 2 lemons juice of 1 lemon
  1. Put ricotta, yogurt, mascarpone, powdered sugar in the bowl of the mixer and mix.
  2. Add zest and lemon juice and continue beating.
  3. Put the filling in a cone and then freeze it in the fridge for 2-3 hours.
  1. Put flour, sugar, cinnamon, soda in a bowl and mix. Then add the melted butter, wine, yolk, lemon zest, 3-4 tablespoons of water and mix.
  2. Knead by hand, add a little more water, cover with cling film and let the dough rest for half an hour.
  3. Divide the dough into smaller pieces, open it into a thin sheet and cut with the cutter into a round shape.
  4. Make a cigar out of aluminum foil and roll up the dough to form a tube.
  5. Fry in plenty of oil until the cannulas turn golden.
  6. Once cool, fill them with the cream and decorate with a couverture in drops and cherries.
