Components
For the base
- 450 gr. digestive type cookies
- 150 gr. unsalted melted butter
For stuffing
- 500 gr. cream cheese at room temperature
- 500 ml cream 35% fat (whipped cream)
- 150 gr. powdered sugar
- 2 sachets of lemon jelly
- 200 ml hot water
- 1 vanilla extract
For overlapping
- 1 package of sour cherry compote
Execution method
For the base
- Beat the cookies in the food processor with the knives until they become powder.
- Add the melted butter and mix well to combine the mixture.
- Spread the mixture on the bottom of the pan with the help of a glass and bake it in a preheated oven at 180 ° C for 10 minutes.
- Remove from the oven and leave to cool well.
For stuffing
- In a bowl pour the hot water and lemon jelly and mix well with a whisk.
- Set aside to cool.
- In the bucket of the mixer, pour the cream cheese, the vanilla extract and the icing sugar and beat them with the whisk on medium to high speed until the mixture is fluffy.
- Then add the lemon jelly and mix well.
- Finally, add the whipped cream and mix lightly with a plastic spatula.
For assembly
- Pour the filling on the baked and cold biscuit and smooth the surface of our cake with a spatula.
- Place the dessert in the refrigerator and let it freeze well for about 5 hours or overnight.
- Pour the sour cherry compote in our dessert and enjoy.
