 Components

  • 800 gr. hard flour
  • 200 gr. whole weat flour
  • 100 ml of olive oil
  • 250 ml of fresh orange juice
  • 1 sachet of yeast
  • 1 tbsp. granulated sugar
  • 250 ml of warm water
  • 200 gr. pitted black olives, finely chopped
  • 1 large onion, finely chopped
  • 1 bunch of coriander, finely chopped
  • 1 cinnamon sticks
  • 1 pinch salt
  • 1 strong pinch of dried mint
  • Sesame for sprinkling (optional)
  • 1-2 tbsp. extra olive oil to spread our mold

Execution methodth

  • In a bowl pour the yeast, sugar, lukewarm water and mix well with a fork until the yeast dissolves. Set aside for 10 minutes until the yeast is activated.
  • In a large bowl put the flour, salt and olive oil. Mix them all together until they look like wet sand.
  • Make a hole in the center and pour the yeast mixture.
  • Then, add the rest of the ingredients and knead well.
  • Grease the walls of a pan and put the dough and grease it with olive oil and sprinkle with sesame seeds, if desired.
  • Let it rest in there for about 2 hours.
  • Bake in a preheated oven at 180 degrees in the air for 1 hour.
  • Allow to cool well before cutting into pieces.
