Exotic rice with pineapple

Components

  • 200 gr. Brown rice
  • 550 ml of water
  • 1 cube vegetable broth or chicken
  • 1 and others olive oil
  • 1 medium onion, finely chopped
  • 1 sc. garlic, finely chopped
  • 1 pinch of cinnamon
  • 250 gr. fresh pineapple or canned, diced
  • 50-100 gr. raisins or cranberries
  • 50-100 gr. almonds
  • Salt
  • Pepper

Execution method

  • Boil the water in a saucepan. Once it boils, add the broth and salt.
  • Add the rice, stir, cover with a lid and cook on low heat for 20-25 minutes until the rice absorbs the liquids.
  • Turn off the heat and leave with the lid on for 5 minutes. Rinse the rice with a fork.
  • At the same time, heat the olive oil in a deep pan and add the garlic, onion and cinnamon and fry for 3-4 minutes.
  • Then add the pineapple and stir until the pineapple has drained.
  • Add the rice, almonds, raisins or cranberries, salt and pepper and mix well.
  • Serve the rice with chicken and enjoy.

Ingredients

  • 200g brown rice
  • 550 ml water
  • 1 cube of vegetable or chicken stock
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 clove of garlic, chopped
  • A pinch of cinnamon
  • 250g fresh or canned pineapple, cut into chunks
  • 50-100g raisins or cranberries
  • 50-100g almonds
  • Salt
  • Pepper

Method 

  • In a pot bring water to a boil, and stir in the cube of vegetable or chicken stock and salt.
  • Add the rice, stir, then cover with the lid and boil over low heat for 20-25 minutes until all of the liquid is completely absorbed.
  • Remove from the heat and let the pot stand, covered for 5 minutes. Remove the lid and fluff with a fork.
  • Heat the olive oil in a pan over medium heat and add the onion, garlic and cinnamon and sauté them for a 3-4 minutes until golden.
  • Then add the pineapple chunks and stir until the pineapple releases its juices.
  • Add the rice, almonds, raisins or cranberries, salt and pepper and stir.
  • Serve the rice with chicken and enjoy!
