Ingredients for 2-4 people

- 1 tablespoon pulp
- 500 grams of long beans cleaned and washed
- 250 grams of peas
- 2 carrots cut into frames
- 4 ripe and firm grated tomatoes
- 2 tablespoons chopped parsley
- 1/4 cup olive oil
- salt freshly ground pepper
- 1/2 chicken cut into 5-6 small pieces (legs)
- 4 tablespoon of olive oil
- 1 chopped onion
- 1 garlic clove
- Pour the olive oil in a large saucepan and heat it. Brown the chicken, to get color all around, for about 8 minutes.
- Add the garlic, the whole clove, the carrots cut into squares and the chopped onion.
- Leave them until the onion becomes transparent, for about 6 minutes. Add the pulp and rub the base of the pot well.
- Add the grated tomatoes, lower the heat and cover the food.
- Simmer for 50 minutes, to soften the chicken.
- When the chicken is almost done, add the green beans and peas.
- Season with salt and pepper and pour over the remaining olive oil.
- Boil for about 20 minutes, until the sauce is melted but the vegetables remain tender.
- Finally, sprinkle with chopped parsley and serve.
