Oily beans with chicken

Ingredients for 2-4 people

  • 1 tablespoon pulp
  • 500 grams of long beans cleaned and washed
  • 250 grams of peas
  • 2 carrots cut into frames
  • 4 ripe and firm grated tomatoes
  • 2 tablespoons chopped parsley
  • 1/4 cup olive oil
  • salt freshly ground pepper
  • 1/2 chicken cut into 5-6 small pieces (legs)
  • 4 tablespoon of olive oil
  • 1 chopped onion
  • 1 garlic clove
  1. Pour the olive oil in a large saucepan and heat it. Brown the chicken, to get color all around, for about 8 minutes.
  2. Add the garlic, the whole clove, the carrots cut into squares and the chopped onion.
  3. Leave them until the onion becomes transparent, for about 6 minutes. Add the pulp and rub the base of the pot well.
  4. Add the grated tomatoes, lower the heat and cover the food.
  5. Simmer for 50 minutes, to soften the chicken.
  6. When the chicken is almost done, add the green beans and peas.
  7. Season with salt and pepper and pour over the remaining olive oil.
  8. Boil for about 20 minutes, until the sauce is melted but the vegetables remain tender.
  9. Finally, sprinkle with chopped parsley and serve.
