Stuffed chicken with halloumi and lountza

A healthy, quick and nutritious recipe for stuffed chicken with halloumi and lountza. You will lick your fingers!

For the chicken

  • 4 chicken breast fillets
  • 2 and others olive oil

For stuffing

  • 8 slices of halloumi
  • 8 slices of lountza
  • 100 gr. grated cheese

Execution method

For the chicken

  • Preheat the oven to 180. C in air.
  • With the help of a knife, carve each chicken breast, so that it opens in the middle like a butterfly.
  • Spread the fillets with 2 tbsp. olive oil and sprinkle with salt and pepper.

For stuffing

  • Carefully open the chicken fillets and make a layer with strips of cheese, then spread the slices of lountza by putting them next to each other, place the halloumi slices on top.
  • Close well with toothpicks, so that the filling does not leave during baking.
  • Heat 1 tbsp in a non-stick pan. olive oil over medium to high heat.
  • Add the chicken and cook for 2 minutes on each side, until golden brown.
  • Transfer the fillets to a fireproof dish and bake in the oven for 10-15 minutes, until the chicken is cooked through and the cheese is melted.
  • Remove the toothpicks, sprinkle the fillets with the juices from the pan and serve with rice or mashed potatoes.

Method

For the chicken

  • Preheat oven over 180 ° C set to Fan.
  • With a knife, make a little pouch on the large and chunky side of each breast.
  • Brush 2 tablespoons of olive oil on the fillets and season with salt, pepper, oregano, rosemary and thyme.

  • Fill each fillet with cheese, lounza and halloumi cheese.
  • Seal with 3-4 toothpicks diagonally to keep the filling inside while cooking.
  • Heat 1 tablespoon of olive oil in a skillet or non-stick pan over medium-high heat. Add the chicken and fry for 2 minutes on each side until golden.
  • Transfer chicken to a baking dish and bake in the preheated oven for 10-15 minutes, or until the chicken is cooked through and the cheese has melted.
  • Remove toothpicks and drizzle with pan juices.
  • Serve with rice or mashed potatoes.
