MATERIALS

1 wp butter

2 and others olive oil

3 large leeks cut

6 large carrots cut

5 cups chicken broth

juice of 1 orange

zest of 1/2 orange (without wax)

1 pinch of nutmeg

salt

pepper

a little chopped parsley for garnish

EXECUTION

In a saucepan, first melt the butter together with the oil and add the leeks and carrots cut into thin slices.

Mix well and leave them covered, over medium heat, to soften without browning. Stir occasionally. Add the orange juice, the zest and the broth. Season with salt and pepper and grate a little nutmeg.

Once the food starts to boil, cover and simmer until the vegetables are soft, about 30. Grind the velvet with the hand blender.

If it is too thin, let it boil for a while to thicken.

If it is very thick, add a little broth.

Distribute the hot soup on hot plates.
