Vegetable pumpkin soup

Ingredients for 6 people

  • 1 kg of pumpkin
  • 2 carrots
  • 1 leek
  • 1 potato
  • 1 liter of vegetable broth
  • 100 ml sour cream
  • cardamom
  • salt and pepper
  • zest and juice from an orange
  • some white wine
  • 100 ml of olive oil
  • 1 tbsp margarine
  • some boiled shrimp (optional)

Implementation

  1. Wash and cut the vegetables into cubes and sauté them in oil.
  2. Stir in the wine and add the herbs, zest and juice and stir. Add the broth.
  3. Cover the pot and let the soup boil on low heat for half an hour to 40 minutes. Mash the soup and bring it to a boil.
  4. Then add the cream and stir. Once it boils again, add the margarine. Serve optionally garnished with some boiled shrimp.
