Dried beans with vinegar and cabbage

A fasting, very healthy and economical recipe for dried beans with vinegar and cabbage!

Servings: 4-6

 Components

  • 500 gr. beans, dry
  • 4 bunches of cabbage, washed and cut in half
  • 2 large onions, sliced
  • 4 and others olive oil
  • 4 tbsp. vinegar
  • 4 sk. garlic, finely chopped
  • Salt

For serving

  • Vinegar
  • Garlic, finely chopped
  • Bread

Execution method

  • Wash the beans and put them in a bowl of water and a pinch of salt to inflate overnight.
  • Pour the water, put cold water in a saucepan and boil the beans. In 5 minutes, drain them and cover them again with cold water and boil them halfway.
  • In another large saucepan, heat the olive oil and lightly sauté the onion for 3 minutes. Once it gets a little color, add the garlic and stir.
  • Add the beans (along with the water) and mix for 1-2 minutes. Lower the heat, cover the pot and let it boil for about 15-20 minutes
  • Then add the cabbage and continue cooking for 20 minutes until soft.
  • Add vinegar, salt and stir. Simmer for 5-10 minutes on low heat.
  • Turn off the heat and stir for a while longer. Serve with vinegar, garlic and bread.
