Preheat the oven to 170 degrees and lightly grease a muffin tin.

Boil the quinoa in water for about 10 minutes, until it absorbs all the liquid and set aside.

In a pan with a little olive oil, sauté the onion until it withers and add the spinach.

Cook for about 2 minutes and remove from heat.

Place the cooked quinoa in a bowl, add the spinach and onion, eggs, cheese, oregano, garlic powder, salt and pepper and mix until smooth.
