Egg muffins with spinach

Ingredients

  • 1 cup of quinoa tea
  • 2 cup of tea water
  • 1 cup tea spinach leaves
  • 1/2 chopped onion
  • 2 eggs
  • 1/4 cup teaspoon of grated yellow cheese
  • 1/2 tsp. oregano
  • 1 tbsp. garlic powder
  • 1/2 tsp. salt
  • Pepper, at will

Implementation

step 1

Preheat the oven to 170 degrees and lightly grease a muffin tin.

Boil the quinoa in water for about 10 minutes, until it absorbs all the liquid and set aside.

step 3

In a pan with a little olive oil, sauté the onion until it withers and add the spinach.

step 4

Cook for about 2 minutes and remove from heat.

step 5

Place the cooked quinoa in a bowl, add the spinach and onion, eggs, cheese, oregano, garlic powder, salt and pepper and mix until smooth.

step 6

Pour the mixture into the muffin tins, covering about 2/3 of each, and bake for about 15-17 minutes.
