Dark chocolate macaroni

Ingredients for 4 people

For macaroni cookies

  • 1 digital scale
  • 100 grams of powdered sugar
  • 50 grams of almond flour (if you do not have it then use it for all uses)
  • 25 grams of unsweetened cocoa powder
  • 2 large egg whites at room temperature for the meringue
  • 65 grams of granulated sugar for the meringue

For the chocolate filling (ganache)

  • 1/3 cup fairly warm cream
  • 112 grams of dark chocolate, finely chopped
  • 1 pinch salt

Implementation

For macaroni cookies

  1. In a bowl sift the icing sugar, flour, unsweetened cocoa.
  2. Put the egg whites in the bowl of the mixer and beat them on the strong ladder. When it starts to fluff, gradually add the granulated sugar and continue beating until it becomes a solid meringue.
  3. In a bowl pour the meringue and half the amount of cocoa mixture and mix gently with a spatula. When the first mixture is absorbed, add the remaining cocoa mixture and mix gently until our ingredients are combined.
  4. Transfer the mixture to a plastic corneal bag (if you work alone then place the corneal bag in a glass and fill the cornea there)
  5. In a large pan with oil paste, make circular discs with the corne and beat them up and down gently to spread the mixture better.
  6. Place in the oven at 175 degrees for a total of 14 minutes. After they are cooked, we prepare the filling.

For the chocolate filling (ganache)

  1. Put the chocolate with the cream and the salt in a bowl and mix until it becomes a shiny ganache.
  2. Leave to cool until well combined and fill the macaroni trays with a tablespoon and they are ready.
