 For the dough

  • 1000 g flour for all uses
  • 150 gr. fine semolina
  • 50 gr. powdered almonds
  • 100 ml of olive oil
  • 400 ml seed oil
  • 400 ml of orange juice
  • 50 gr. granulated sugar
  • 1 tbsp. baking powder
  • 1 tbsp. cinnamon
  • 1 tbsp. vinegar
  • ½ κ.γ. soda
  • 1/2 tbsp. cloves
  • 1/4 tbsp. nutmeg
  • Grate 2 oranges

For the syrup

  • 600 gr. granulated sugar
  • 500 ml of water
  • 200 gr. honey
  • 2 cinnamon sticks
  • 4 whole cloves
  • 1 orange cut in half

For sprinkling

  • Almonds
  • Fir Honey

Execution method

For the syrup

  • In a saucepan put all the ingredients for the syrup except the honey.
  • Stir until it boils. Do not stir again from the time the boiling starts.
  • Boil on low heat for 5 minutes. from the time they boil.
  • Add the honey and remove from the heat, stir lightly and set aside to cool the syrup.

For the dough

  • Preheat the oven to 180 ° C in air.
  • In a bowl put the powdered almonds, flour and semolina, baking powder, all the herbs and mix. Set aside.
  • In another bowl pour all the liquids except the orange juice. Add the sugar and mix very well by hand.
  • Dissolve the soda in the juice, stir and add it to the mixture. Stir with the wire.
  • Finally, gradually pour in the mixture of solids and mix very gently with your hands, from the center outwards so as not to cut the mixture. (does not need much stirring to not tighten).
  • Shape the melomakarona into small oval shapes and pass one of their surfaces in a grater or sieve to obtain the known shape. If we want, we pierce them with a fork.
  • Place them in a greased pan and bake for about 30 minutes, until they get a dark golden color.
  • Once they are ready, remove from the oven, pour the hot melomakarona in the cold syrup and leave for 30 seconds. Take them out and leave them in a sieve to drain.
  • Serve sprinkled with honey and almonds.
