Potato croquettes with mushrooms

Ingredients for 4 people

Implementation

  • 200 grams of mushrooms
  • 400 grams of potatoes
  • 1 tablespoon chopped basil
  • 100 grams of grated emmental cheese
  • 20 grams of butter
  • 2 eggs
  • 1/2 cup grated toast
  • 2 tablespoons vinegar
  • 2 tablespoons salt
  • frying oil
  1. Peel the potatoes, cut them into slices and boil them in salted water for 20 minutes until soft.
  2. When they boil, melt them into a puree.
  3. Cut the mushrooms into small pieces on a cutting board and sauté in butter for 10 minutes.
  4. Then pour the mushroom puree into a bowl and mix.
  5. Add the cheese, basil, one egg and salt and continue stirring.
  6. Shape the dough into long, narrow balls like croquettes, dip each croquette in the second egg and on a plate with breadcrumbs.
  7. Fry the croquettes in hot oil for 3 minutes on each side.
