Peppers stuffed with halloumi and olives

Ingredients for 2-4 people

  • 250 grams of Cypriot halloumi
  • 4 red peppers
  • 1 red chili - chopped
  • 1 lemon - the zest and juice
  • 2 teaspoons of sweet fresh oregano - chopped
  • 4 olives - cut into strips

Implementation

  1. Cut the top and bottom of the pepper. Remove the seeds and crumb.
  2. Put each halloumi in each pepper.
  3. Mix all the other ingredients together.
  4. Repeat with all ingredients.
  5. Spread the lemon mixture with olives on top of each pepper.
  6. Fold the peppers with a damp thin rope.
  7. Place on the oven grill at the highest temperature and bake for 10 minutes.
