Peppers stuffed with couscous

Ingredients for 2 people

• 4 large Florin peppers
• 1 cup couscous and 1 cup boiling water
• 4 tbsp. tablespoon sea buckthorn
• 2 tbsp. chopped pistachio soup or pumpkin seed
• 1 onion, diced
• 2 diced tomatoes
• 2 small cucumbers chopped into cubes
• 1 handful of fresh dill, parsley and chopped mint
• lemon juice
• 1 tsp. sweet cumin
• salt
• pepper

1. Put the peppers in a pan and bake at 180 degrees for about 25 minutes, until the flesh starts to dry out and the skin swells.
2. At the same time boil the water. Put the couscous in a bowl and add the boiling water. Cover with a plate until the couscous has absorbed all the water.
3. Add the rest of the ingredients to the couscous and stir.
4. Remove the peppers from the oven, cover with cling film, allow to cool slightly and peel the peppers, pulling the peel with your finger to remove the flesh.
5. Then cut the lid, stalk, pepper to make a hole and fill them.
6. Allow to cool for about 10 minutes. Fill the pepper with a small spoon with the couscous.
7. Allow the stuffed peppers to cool and serve with a few fresh chopped herbs.
