Ingredients:
Peel and cut the zucchini into bite-sized pieces and wipe with absorbent paper. We do not let it come in contact with water at all. Place our courgette in a fireproof dish, cover it with olive oil and season with salt and pepper. Leave it on the oven grill until it turns brown on both sides.
Then add the fennel, onion, lemon juice and water. Close our utensil and bake in a preheated oven at 180ºC for about an hour or until our courgette softens and drinks its juices.
