Aromatic Cypriot salad with delicious halloumi, pomegranate, raisins and pastels. A very very tasty salad with special flavors!

Components
For the salad
- 2 bunches of rocket, coarsely chopped
- 200 gr. halloumi, cut into cubes
- 1 pomegranate, peeled
- 50 gr. dried grapes
- 250 gr. pistachio with peanuts, cut into cubes
For the dressing
- 4 and others olive oil
- 2 tbsp. balsamic vinegar
- 2 and others honey
- 1 and others lemon juice
- 1 tbsp. mustard
- Salt
- Pepper
Execution method
For the dressing
- In a bowl, add all the ingredients and mix well with a whisk until the mixture is homogeneous.
For assembly
- Transfer the rocket to a salad bowl.
- Then add the halloumi after grilling.
- Add the halloumi, raisins, pastel and pomegranate.
- Pour over the dressing, stir and serve the salad immediately.

- 1 pomegranate, deseeded
- 50 g grapes
- 250 g sesame seed candy with peanuts, cut into cubes
For the dressing
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp honey
- 1 tbsp lemon juice
- 1 tsp mustard
- Salt
- Pepper
Method
For the dressing
- Combine all the ingredients in a mixing bowl and whisk to combine.
To assemble
- Add a rocket to a large bowl.
- Cook the halloumi in a frying pan or griddle pan for a few minutes each side, until golden brown.
- Top with grilled halloumi, raisins, sesame seed candy and pomegranate seeds.
- Drizzle over the dressing and serve immediately.
