Salad with eggplants, tomatoes and olives

Ingredients for 2-4 people

  • 100 grams of crushed green olives
  • 1 bunch of rocket
  • 50 grams of feta cut into cubes
  • 2 eggplants
  • 1 tomato
  • 1 hot pepper
  • Enough pepper
  • Olive oil
  • A little parsley

Implementation

  1. Fry the aubergines for 10 minutes after you have cut them into cubes.
  2. Finely chop the olives, pepper, feta, arugula, eggplant and tomato.
  3. Mix all ingredients well and add a little oil and salt.
