Ingredients for 4-6 people
For the almond pie
- 3 cups crushed almonds
- 8 eggs separated yolks with egg whites
- 1 ½ cup sugar
- 3 toasts beaten
- 2 teaspoons baking powder
- Or a glass of cognac wine
- Grate a lemon
- 1 pinch salt
For the syrup
- 2 cups sugar
- 1 ½ cup of water
- Juice of half a lemon
Implementation
- Beat the sugar with the egg yolks until they turn white. Dissolve the baking powder in the brandy and add it to the mixture along with the almonds, toast and lemon zest.
- Then, beat the egg whites until they become a tight meringue and add them to the mixture together with the salt.
- Pour the mixture into a buttered pan and bake in a medium oven for about 45 minutes.
- Meanwhile, prepare the syrup and pour over the dessert as soon as you take it out of the oven.
