Minestrone soup with summer vegetables

Ingredients

• 1 tbsp olive oil
• 2 carrots, finely chopped
• 2 sprigs of celery, finely chopped
• 1 onion, finely chopped
• 2 zucchini, diced
• 1 potato, diced
• 3 cups spinach tea
• 3 cloves garlic, melted
• 1 tbsp. salt
• 1/2 tsp. pepper
• 1 tomato sauce
• 2 cups pasta for soup
• 1,8 liters of vegetable broth

Implementation

step 1

Heat the olive oil in a large saucepan and sauté the carrots with the celery, onion and potato for three minutes, after seasoning with salt and pepper.

Add the garlic and sauté for a minute.

Add the tomato sauce, zucchini and vegetable broth and mix.

step 4

Put the lid on the pot and simmer for 45 minutes.

step 5

Add the spinach and pasta, cover and simmer for 10 minutes.

step 6

Allow to cool before serving.
