Skewers with halloumi and zucchini

Ingredients for 2-4 people

  • juice of a lemon
  • 5 tablespoon of olive oil
  • 1 clove garlic, finely chopped
  • 2 tablespoons parsley, finely chopped
  • 1/4 teaspoon chili
  • 1 / 4 spoonful of salt
  • pepper
  • 1 red pepper cut into thick slices
  • 1 zucchini cut into thick slices
  • 200 grams of halloumi cut into thick frames

Implementation

  1. In a bowl, mix the lemon juice together with the olive oil, garlic, chopped parsley, chopped chili, salt and pepper.
  2. Cut the zucchini into thick slices, the peppers and the halloumi into thick slices and throw them in the marinade bowl.
  3. Refrigerate for 4 hours or overnight.
  4. Then nail the vegetables together with the halloumi on wooden skewers and bake in the oven at 200 ° C for 20-30 minutes.
