Components

  • 250 gr. spaghetti

For the chicken

  • 2 chicken breast fillets
  • 2 and others olive oil
  • Thyme
  • Oregano
  • Salt
  • Pepper

For the tomato sauce

  • 250 gr. tomato juice
  • 100 gr. ketchup
  • 100 ml of water
  • 2x 400 gr. canned tomatoes
  • 2 tbsp. tomato paste
  • 2 garlic cloves
  • 2 and others olive oil
  • 1 tbsp. fish sauce, optional
  • 1 tbsp. dried oregano
  • 1 tbsp. dried basil
  • 1 tbsp. red pepper flakes
  • 1 large onion, finely chopped
  • Or a bunch of chopped parsley
  • 50 g Parmesan
  • salt
  • freshly ground black pepper

For overlapping

  • 200 gr. grated cheese

Execution method

For the chicken

  • Preheat the oven to 180 ° C in air.
  • Add olive oil, salt, pepper, oregano, and thyme to our fillets and spread them well with our hands so that the olive oil goes everywhere.
  • Put a non-stick pan on high heat to burn well.
  • Put the chicken fillets in the hot pan and add color to our fillets.
  • When the chicken gets the color on both sides, transfer it to a small pan.
  • Bake for 15 minutes.

For the tomato sauce

  • Heat the olive oil in a saucepan over medium heat.
  • Add the onion and garlic and cook, stirring, until soft and golden for 2 minutes.
  • Then add the pepper flakes, oregano, tomato paste, tomato juice, ketchup, water, parsley and basil and mix.
  • Add the fish sauce, pepper and salt and lower the heat. Cover with the lid slightly open and cook for about 20 minutes until our sauce sets.
  • Put a pot of salted water on the fire to boil. Once the water has boiled, add the spaghetti and cook according to the instructions on the package (not to overcook).
  • Once the pasta is ready, remove from the heat.
  • Put the spaghetti in the colander to drain and then in the saucepan with the sauce and mix.
  • Add parmesan and mix lightly.
  • Put the chicken in the sauce and put the grated cheese on top.
  • Cover the pot for 2 minutes until the cheese is melted.

  • 100 g ketchup ketchup
  • 100 ml water
  • 2 tbsp tomato paste
  • 1 large onion, chopped
  • 2 cloves of garlic
  • 2 tbs olive oil
  • 1 tbs fish sauce, optionally
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp chilli flakes oregano
  • And a bunch of parsley, finely chopped
  • 50 g parmesan cheese
  • Salt
  • Pepper

for the topping

  • 200 g shredded cheese

Method

For the chicken

  • Preheat oven to 180 ° C Fan.
  • In a bowl, add the chicken, olive oil, salt, pepper. oregano and thyme. Toss to coat.
  • Place a pan over high heat and let it get very hot.
  • Transfer chicken to hot pan and sauté until golden on all sides.
  • Prepare a small baking pan that is just large enough to fit the chicken.
  • When the chicken has turned golden, add 1 tbs of butter and let it melt.
  • Pour the hot butter over it and bake for 15 minutes.

For the tomato sauce

  • Put a saucepan on a medium heat and add the olive oil.
  • Add the onion and garlic and stir for 2 minutes until they soften and become golden.
  • Then add the peppercorns, oregano, ketchup, tomato juice, tomato paste, water, parsley and basil and stir. Add the fish sauce, pepper and salt and lower the heat.
  • Cover with lid and boil for about 20 minutes until sauce is thickened.
  • Bring a pot of salted water to the boil and cook pasta according to package directions.
  • Once cooked, remove pasta from the heat and drain in a colander or sieve over the sink.
  • Tip in the spaghetti and use tongs to toss well.
  • Add parmesan cheese and mix lightly.
  • Put the chicken in the sauce and sprinkle on top with the grated cheese.
  • Cover the pot with lid for 2 minutes until the cheese melts.
