The healthiest and easiest recipe for pasta with creamy avocado sauce and tomatoes. A dish that will be loved by those who pay attention to their diet but also by those who want to try something different!

Components

  • 250 gr. spaghetti
  • 2 avocados, ripe
  • 50 gr. olive oil
  • 1 sc. garlic, finely chopped
  • 2 and others lemon juice
  • 25 gr. coriander or spinach (leaves only)
  • Salt
  • Pepper

For serving

  • 2 medium tomatoes, cut into small cubes

Execution method

For the spaghetti

  • In a saucepan with boiling water add the salt, the whole grain spaghetti and boil them. When they are ready, keep some water and strain them.

For the avocado sauce

  • Cut the avocados in half, remove the stones and with a spoon empty the flesh into the bucket of the mixer.
  • Add olive oil, lemon juice, spinach or coriander, pepper, salt, and garlic and beat to homogenize the ingredients.
  • When the pesto is ready, transfer it to a bowl and add the water we kept from the pasta and mix.

For serving

  • Put the hot pasta in the bowl with the avocado sauce and mix.
  • Add the tomatoes, stir and serve.

Ingredients

  • 250 g whole wheat spaghetti
  • 2 ripe avocados
  • 50 g olive oil
  • 1 clove of garlic, chopped
  • 2 tbsp lemon juice
  • 25 g fresh coriander or spinach (the leaves only)
  • Salt
  • Pepper

to serve

  • 2 medium tomatoes, cut into small cubes

Method

The the spaghetti

  • Bring a pot of salted water to the boil and cook pasta according to package directions. Once cooked, reserve a bit of the hot pasta water then drain pasta.

For the avocado sauce

  • Place the avocado flesh, olive oil, lemon juice, garlic, spinach or coriander, salt, pepper and garlic lemon juice in a blender or food processor and blend well.
  • Transfer to a bowl and add a bit of the hot pasta water.

to serve

  • Add hot pasta to the bowl with the avocado sauce and mix. Add tomatoes, mix and serve immediately.
