Mustard Crusted Lamb Recipe

Ingredients

  • 2 kilos of lamb
  • 1 tbsp olive oil
  • 3 garlic cloves, finely chopped
  • 1 tbsp. dried thyme
  • 1 tbsp. dried oregano
  • 1 tbsp. salt
  • 1 tbsp. black pepper
  • 2 tbsp Dijon mustard

Preheat the oven to 220 degrees.

Mix the oil, garlic, thyme and oregano in a small bowl.

Use a paper towel to pat the lamb dry and season with salt and pepper.

Place the lamb on a baking sheet and brush with the Dijon mustard.

Sprinkle the lamb with the spice mixture you prepared in step 2.

Cook the lamb for 25 minutes or until a meat thermometer (if using) reads 63 degrees.

Let the lamb rest for 10 minutes before slicing.
