- 4 cod fillets
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 cup tea green olives, seedless
- 1/2 red onion, sliced
- 1 pack of cherry tomatoes cut in half
- 1 tbsp. dried basil
- 1 tbsp. dried dill
- 1 tbsp. dried thyme
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Preheat the oven to 200 degrees and pour 1 tablespoon olive oil into a large rectangular pan.
Add the 4 cod fillets to the pan and cover one with 1 tablespoon of lemon juice.
Add 1/4 cup green olives, 1/2 sliced red onion and 1 packet of cherry tomatoes cut in half around the cod.
Sprinkle with basil, dill, thyme, salt and pepper.
Bake for 10 minutes or until the cod has reached an internal temperature of 62 degrees.
Serve with extra lemon slices.
