Recipe for Cod in the oven with cherry tomatoes and olives

Ingredients

  • 4 cod fillets
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 cup tea green olives, seedless
  • 1/2 red onion, sliced
  • 1 pack of cherry tomatoes cut in half
  • 1 tbsp. dried basil
  • 1 tbsp. dried dill
  • 1 tbsp. dried thyme
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Implementation

step 1

Preheat the oven to 200 degrees and pour 1 tablespoon olive oil into a large rectangular pan.

Add the 4 cod fillets to the pan and cover one with 1 tablespoon of lemon juice.

Add 1/4 cup green olives, 1/2 sliced ​​red onion and 1 packet of cherry tomatoes cut in half around the cod.

Sprinkle with basil, dill, thyme, salt and pepper.

step 5

Bake for 10 minutes or until the cod has reached an internal temperature of 62 degrees.

Serve with extra lemon slices.
