Perfect choice for a dinner side dish
In a small bowl, whisk together the apple cider vinegar, olive oil, garlic powder, chili powder, salt, and black pepper and set aside.
Add a little water to a large pan and bring to a simmer. Add the corn and cook for 4 to 5 minutes, turning to cook on all sides. Remove the corn and let it cool until you can process it.
Remove the kernels from the corn and add to a large bowl. Add the cherry tomatoes, red onion, bell pepper and basil and toss. Drizzle with the dressing and toss well.
Serve immediately garnished with crumbled feta.
