Ideally accompany with brown rice and steamed vegetables
1 kg of medium uncooked shrimp, cleaned and peeled
1/3 cup tea honey
1/4 cup tea soy sauce
2 garlic cloves, finely chopped
1 tbsp. chopped fresh ginger (optional)
2 tbsp. olive oil
Chopped onion for garnish (optional)
Lightly mix the honey, soy sauce, garlic and ginger (if using) in a medium bowl.
Place the shrimp in a large bowl, pour 1/2 of the marinade mixture on top, stir and let the shrimp marinate in the fridge for 15 minutes or up to 8-12 hours. Cover and place the rest of the sauce in the fridge.
Heat the olive oil in a pan over medium to high heat. Place the shrimp in the pan and cook on one side until golden brown, about 45 seconds and then turn them over on the other. Add the rest of the marinade and cook everything until the shrimp are cooked, about 1-2 more minutes.
Serve the shrimp and garnish with spring onions. The sauce goes well with brown rice and steamed vegetables on the side.
