Ingredients

  • 1 kg apples (preferably red)
  • 1 cup teaspoon of granulated sugar
  • 2 tbsp lemon juice
  • 1 cinnamon stick

Implementation

Peel a squash, grate it and squeeze the juice. Place in a saucepan with 1,5 cups of water and simmer over medium-high heat, stirring occasionally. Cook until the apples are soft and the mixture is reduced by a quarter, about 15 minutes.

Add the sugar, lower the heat to medium and cook, stirring frequently, until the mixture is jammed and thickened, about another 25 minutes. Add the lemon juice and cinnamon stick and stir to incorporate.

Simmer for another 5 to 7 minutes for the cinnamon to leave its aroma on the jam.

When the jam has the desired texture, remove the cinnamon stick. Divide into clean jars and close well. Store in the refrigerator for up to 2 weeks.
