Ingredients
- 1/2 cup tea nuts
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 stalks of celery
- 1 pear
- 1 fennel bulb
- 1 sliced onion
- 2 small bunches of arugula
Implementation
step 1
Place the walnuts in a pan and bake at 200 degrees for 10 minutes. Allow to cool and chop.

In a large bowl, mix the lemon juice with the olive oil, half a teaspoon of salt and 1/4 teaspoon of pepper.

Add the celery, pear, fennel and onion (all cut into thin slices) and mix together.
step 4
Just before serving, add the arugula, mix with the pear mixture and serve with the nuts.
