Recipe for Homemade Fish Croquettes with Parmesan Crust

Ingredients

  • 4 sole fillets, cut into strips
  • 1/2 cup teaspoon flour for all uses
  • 2 eggs
  • 1/2 fl. tea panko bread crumbs
  • 1/4 fl. of grated Parmesan cheese
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • Salt and ground black pepper
  • Olive oil

Implementation

Preheat the oven to 230 degrees.

Mix the flour, salt and pepper in a shallow bowl. Beat the eggs in a separate bowl until foamy, about 30 seconds. In a third shallow bowl, mix together the panko breadcrumbs, Parmesan, basil and oregano.

Dredge fish in flour mixture until evenly coated, shaking off excess flour. Dip the fish in the egg, letting the excess egg drip into the bowl. Press the fish into the panko mixture until evenly coated.

Place the covered fish on the prepared baking sheet and drizzle with olive oil.

Bake in the preheated oven until the fish croquettes are golden, about 15 minutes.
