Recipe for Chicken Breast stuffed with spinach and mozzarella

  • 4 boneless chicken breasts
  • 120 gr. cream cheese, at room temperature
  • 1/2 cup teaspoon frozen spinach, thawed
  • 1 cup teaspoon grated mozzarella, divided
  • A few flakes of red pepper
  • 2 tbsp olive oil
  • Salt, black pepper

Preheat the oven to 200 degrees and spread a greased pan on a baking sheet. Cut the chicken lengthwise to create a kind of "envelope". Season with salt and pepper and place in the pan.

In a medium bowl, combine the cream cheese, spinach and half a cup of mozzarella tea. Add salt and pepper and a pinch of red pepper flakes and mix.

Fill each chicken breast with the cheese and spinach mixture, garnish with the remaining mozzarella and sprinkle with oil.

Bake in the preheated oven until the chicken is well cooked, for at least 35 minutes.
