- In a deep bowl or bowl put 1/3 of the flour, ie half a kilo, with the yeast, salt and anise.
- Add little by little lukewarm water and knead until it becomes a smooth, firm dough.
- Cover and leave in a warm place for 20-30 minutes.
- Knead again, adding wine, oil and flour in order. Little by little and over and over again until the materials are gradually incorporated.
- We must have a soft dough. If it is hard, add a little wine and a little oil. Knead the raisins inside, so that they spread evenly.
- Preheat the oven to 200 ° C.
- Grease the pan with oil and put the dough inside. We press it with the palms to spread evenly. It must be 1½ finger high, because when baking it will double.
- Sprinkle the sesame seeds and cut into square or baklava pieces.
- Bake the lagana and after half an hour lower the temperature to 160 ° C, until it is completely cooked. Bake for a total of about 45 minutes.
