Components

For the marinade

  • 4 chicken fillets
  • 100 ml of olive oil
  • 100 ml soy sauce
  • 100 ml of lime juice
  • 4 tbsp. Brown sugar
  • 1 onion
  • 2 sk. garlic, finely chopped
  • 1 tbsp. paprika
  • 1 tbsp. cumin
  • 1 tbsp. black pepper
  • 1/2 tbsp. Cayenne pepper

For vegetables

  • 1 onion, cut into thin slices
  • 1 large green pepper, cut into thin slices
  • 1 large red pepper, cut into thin slices
  • 1 large yellow pepper, cut into thin slices

For serving

  • 10-12 Mexican pies
  • Guacamole
  • Strained yogurt
  • A little grated yellow cheese
  • A little fresh coriander

Execution method

For the marinade

  • Put all the ingredients for the marinade in a blender and beat to homogenize the mixture. Transfer 120 ml of the marinade to another bowl and set aside. Put the fillets in the bowl and mix well so that the marinade goes everywhere.
  • Let the meat marinate for at least 3-12 hours in the refrigerator.

For vegetables

  • Add the vegetables to the bowl with the rest of the marinade that we have kept and mix well.
  • In a large non-stick pan add the vegetables and sauté until caramelized, about 4-5 minutes.
  • Remove the vegetables from the pan and keep them in a bowl.
  • Cut the chicken fillets into thin slices and put them in the pan and sauté the chicken for about 3-4 minutes.
  • Return the vegetables to the pan and stir.

For assembly

  • Wrap the pies in foil and bake them in a preheated oven at 200ºC for 5 minutes to heat but not dry.
  • Fill them with 2-3 tbsp. from our stuffing, guacamole, yogurt and cheese, we wrap up and enjoy.
