Chicken a la romana

Traditional dish of Lazio from the so-called "cuisine of the poor"

Ingredients

  • 1 whole
  • 400 gr. canned
  • 1 potato
  • 2 and others olive oil
  • 100 gr.
  • 3 green peppers
  • 100 ml white wine
  • 2 pcs. garlic
  • 250 ml chicken broth
  • 1 tbsp. capers
  • Fresh thyme and oregano
  • Parsley
  • Salt Pepper

Implementation

step 1

Cut the chicken into large pieces (about 8) and season with salt and pepper. Put a saucepan over medium heat and add the olive oil. Fry the first 4 pieces of chicken until they turn brown on all sides. Remove from the pan, place in a pan and continue with the remaining chicken.

Remove the rest of the chicken from the pot and add the garlic and bacon. Add the peppers and let them sauté for about 2 minutes, adding a little thyme and oregano.

Quench with white wine and let the alcohol evaporate for 1-2 minutes. Add the potatoes, tomatoes, chicken broth and all the chicken pieces and simmer for about 40 minutes. Serve with fresh parsley.
