Skewers with vegetables and couscous salad

Ingredients:
1 kg of beef or pork cut into bites for skewers
For the marinade:
1 cup yogurt
1 grated onion
1 grated tomato1 grated apple
1 tbsp. dried mint
1 tbsp. boukovo
For skewers:
1 red onion cut into quarters
1 green pepper cut into quarters
Whole cherry tomatoes

For the salad:
2 cups teaspoon hot chicken broth or hot water
1½ φλ. tea couscous
1/3 cup black currant tea
2 tbsp. parsley
2 tbsp. mint
2 and others olive oil
2.k.s. balsamic
1 red pepper cut into strips
1 sliced ​​onion

Pepper

Instructions:
Put the marinade ingredients in a bowl and mix. Add the meat, stir to cover and cover the bowl. Marinate for 4 hours, at most for 24 hours (always in the refrigerator).

We pass the pieces of meat alternately with the colored vegetables on the spit. Season the skewers with salt and pepper.

For the salad: Put the couscous and raisins in a bowl, cover with boiling broth or water. Cover and let stand for 10΄ to soften. Heat the olive oil in a pan and over medium heat let the onion and red pepper wither, stirring for a few minutes. Remove from the heat. Add the couscous by dissolving it with a fork to make it crispy. Add the balsamic, parsley, mint and season with salt and pepper. Mix well.

Bake the skewers on the grill for about 3΄-4΄ on each side.

Serve the skewers with the couscous salad and yogurt.
