Squids with spinach and dill

Light but delicious dish…

Ingredients
1 kg squid, fresh or frozen, cleaned and sliced
7–8 spring onions (white and tender green part), finely chopped or 2 medium onions, finely chopped
1 kg of fresh spinach *, cleaned and coarsely chopped
1 bunch of dill or fennel (without the thick stalks), finely chopped
3 garlic cloves, finely chopped (or as much as we like)
80 ml white wine
60 ml of olive oil
1 teaspoon tomato paste soup (optional)
a little nutmeg, grated
lemon juice (as many as we like)
salt, freshly ground pepper

Procedure

In a saucepan, heat the olive oil in a saucepan and sauté the squid slices and onions (fresh or dried) for 3-4 minutes, until slightly wilted.

Add the garlic, continue sautéing for a few seconds and then add the spinach, a little nutmeg and a little salt. Turn the spinach a few times to wither and reduce its volume. Then, add the wine and after 2-3 minutes put, if desired, the tomato paste dissolved in 1 flitz. brown water. Lower the heat, cover the pot and cook for about 20 minutes. Do not add any more liquids as the spinach and the squid will produce a little more. But watch, and if the liquids are saved early, add a little water.

Once the food is ready and left with its oil, remove from the heat, add the dill or fennel and stir. Serve with as much lemon juice as you want and freshly ground pepper.

* Advice
While this food is easy and fast to cook, it has a bit of a hassle in cleaning spinach and squid. To save time, we can get ready-made peeled spinach from supermarkets in vacuum packages, but it costs more. Also, instead of fresh squid, a decent and tasty solution is the frozen ones, which are cleaned and ready for cooking.
