We consider them fattening, full of fat and unhealthy and are one of the first to be cut by anyone who wants to diet. A new study, however, shows that potatoes not only do not gain weight, but can also lower blood pressure as long as they are cooked properly… 

There are three options: in the microwave, boiled or baked - without butter, oil or any sauce, according to Dr. Joe Vinson, a professor of chemistry at Scranton University in Pennsylvania who conducted the study.

Dr. Vinson and his colleagues recruited 18 men and women, who ate six to eight golf ball-sized potatoes daily at noon and night. After one month, their systolic and diastolic pressures (large and small in measurement, respectively) had decreased by 3,5% and 4,3%.

In addition, no one had gained weight. Most of the volunteers were overweight or obese and were taking medication for hypertension. As Dr. Vinson said at the American Chemical Society's annual conference in Denver, potatoes satiate hunger and, with their help, volunteers may limit other unhealthy foods.

The potatoes used in the study were purple and so small that each contained just 12 calories, but the researchers estimate that common potatoes provide similar benefits. Regarding the way of cooking, the researchers say that the ideal is to cook and consume it with the peel, which contains valuable chemicals.

Microwave cooking is considered ideal because it retains most of their nutrients.
