In statements to InBusinessNews, the CEO of the company, Brian Lee, underlined that the first restaurant in Cyprus is expected to open in January, without excluding the opening to take place shortly before Christmas, as the space that will house the first has already been found. According to Brian Lee, the first Freshly Chopped restaurant opened in May 2012 in Ireland, with the second opening in 2014 and the third in 2015. Due to the great impact of the restaurant chain philosophy, the company opened in 2016. 16 restaurants, while the number of new restaurants in 2017 is estimated to rise to 20, bringing the number of Freshly Chopped restaurants in Ireland to 36. He added that in February 2018 it is planned to expand the restaurant chain in the UK with the opening 4 restaurants. 

At the same time, Mr. Lee noted that the company is in consultations for its expansion to other countries, but avoided referring to specific countries. He stressed that Freshly Chopped is the fastest growing brand in Ireland at the moment and employs around 450 people.

The first restaurant is expected to open in January 2018 on Themistokli Dervi Street in Nicosia by Verisol Holdings Ltd with owners Konstantinos Polyviou and Michalis Papakostas. Speaking to InBusinessNews, Konstantinos Polyviou said that the first contact with the franchise was made in Ireland and after consulting with the owner and securing the rights for Cyprus and Greece, it was decided to open the first restaurant in Nicosia. 

The restaurant will be open from the morning offering various options for a healthy breakfast and good coffee, while there will be options for lunch and dinner.
