Components
- 500 gr. lentils
- 50-100 ml olive oil
- 2 chopped onions
- 2 cloves chopped garlic
- 200 g barley
- 1 cube of vegetables
- 120 ml vinegar
- 1 liter of water
- Salt
Execution method
- Put the lentils in a colander, clean them and wash them.
- Then, put them in a pot with cold water (1 liter) that covers them well and boil them for about 10-15 minutes until they are half cooked.
- At the same time, in a saucepan pour the olive oil over medium heat and fry the onion and garlic for 2-3 minutes, until slightly softened.
- After they soften, add the barley and sauté for another 2 minutes, stirring, until it turns a little reddish.
- Then add the lentils together with their broth, half cover the pot and cook on medium to low heat for 20-25 minutes or until the lentils are soft, boil the barley. During this time we do not stir again.
- When the lentils and barley are cooked, add the salt and vinegar and cover the pot for a while longer to absorb the liquids.
- Serve with seasonal vegetables, black olives and fried egg.
