Linguine with avocado sauce

A recipe that will excite even those who do not eat avocado

Ingredients

  • 500 gr. linguini
  • 2 ripe
  • 50 gr. oil
  • juice and zest of 2 limes
  • a little coriander
  • 1 tbsp. bukovo
  • salt and pepper
  • 1 sc. garlic, finely chopped
  • For serving
  • 100 gr. cashews
  • a little royal
  • 1 tbsp. oil

Implementation

step 1

In a saucepan with boiling water add the linguini and leave them for as long as it says on the package. Remove from the heat and strain.

Make the avocado pesto. Cut the avocados in half, remove the seeds and with a spoon empty the flesh into the mixer. Add the olive oil, the zest and the lime juice, the coriander, the boukovo, pepper, salt, chopped garlic and beat until the sauce thickens.

Put a pan on the fire to burn, add the cashews and sauté them. In a bowl we have put the pesto, throw the pasta and mix. Add the cashews, the basil and a little olive oil.
