Spiral pumpkin pie

Easy recipe for fluffy and crispy twisted pumpkin pie with walnuts and raisins.

Waiting time: 90 minutes

Execution time: 60 minutes

Baking time: 60 minutes

Servings: 10-12

Components

For the dough

  • 500 gr. hard flour
  • 100 ml of warm water
  • 100 ml of fresh orange juice
  • 50 - 100 ml sunflower oil
  • ½ κ.γ. salt
  • 1 tbsp. granulated sugar
  • 1 tbsp. cinnamon
  • 1 sachet of vanilla
  • 1 tbsp. vinegar
  • ½ κ.γ. baking soda
  • Cornflower for opening the leaves

For stuffing

  • 1 kg grated pumpkin
  • 300 gr. grated apples
  • 150 gr. dried grapes
  • Grate 1 orange
  • 50 g sugar
  • 100 gr. nuts pounded
  • 100 gr. groats
  • 1 tbsp. cinnamon
  • ½ κ.γ. Cloves
  • ¼ sp. nutmeg

For overlapping

  • Powdered sugar

Execution Method

For the dough

  • In a large bowl put the flour, salt, baking soda and sunflower oil and mix by hand until it becomes a crumb-like mixture.
  • Next, make a puddle in the center and pour in the vinegar and crystal sugar and knead by hand or in the mixer with the hook, gradually adding the orange juice and water until it becomes an elastic, smooth dough that does not stick.
  • We shape it into a ball, wrap it with cling film and leave it in the fridge for at least 30-60 minutes to rest.

For stuffing

  • Meanwhile, prepare the filling by mixing all the ingredients with a spoon.
  • Preheat the oven to 180 degrees in the air
  • After 30-60 minutes, sprinkle with corn flour on our counter or table, and cut the dough into 4 equal pieces.
  • We take a piece and open it with the rolling pin or the machine on a thin, rectangular sheet. (Caution, if the sheet is thick it will not bake well).
  • Spread on each sheet with 3 tbsp. a strip of the filling mixture, covering the entire surface.
  • Wrap in a roll and then twist, turning its edges in the opposite direction, like a string.
  • Put it in a well-oiled pan, starting from the middle and wrapping it outwards to form a snail.
  • Continue with the remaining pieces and place them in the pan in such a way as to create a large twist.
  • Sprinkle the pie with a little water and bake in the preheated oven for about 1 hour or until golden brown.
  • Leave to cool and sprinkle with powdered sugar and serve.

  • 1 tsp vinegar
  • ½ tsp baking soda
  • Cornflour for the opening of the dough

  • Zest from 1 orange
  • 50g granulated sugar
  • 100g walnuts
  • 100g bulghur
  • 1 tsp cinnamon
  • ½ tsp ground cloves
  • ¼ tsp nutmeg

Method

for the dough

  • In a large bowl, add the flour, salt, baking soda and sunflower oil. Rub the mixture between your fingers until it resembles wet sand.
  • Make a small well in the center and add vinegar and sugar. Gradually, add the orange juice and water and knead by hand or in the mixer until you create a smooth and elastic dough.
  • Shape into a ball and wrap in plastic wrap. Refrigerate and allow it to rest for at least 30-60 minutes.

for the filling

  • Meanwhile, prepare the filling by mixing all the ingredients with a spoon.
  • Preheat the oven to 180οC.
  • After 30-60 minutes, remove the dough from the refrigerator.
  • Take 1 piece and cover the rest with a towel so they won't dry out. Knead the piece of dough on a lightly floured working surface and then roll out into a thin sheet using a roller or machine.
  • On each phyllo dough, spread with 3 tbs a strip of the filling mixture, covering the entire surface.
  • Wrap in a roll and then twist its ends counterclockwise.
  • Circularly place in a well-greased baking pan, starting from the middle and wrapping outward to form a "snail".
  • Continue with the rest of the pieces and place them in the pan in such a way as to create a large twist.
  • Sprinkle the pie with water and bake in a preheated oven for about 1 hour or until golden.
  • Allow to cool and sprinkle with powdered sugar and serve.
